LEMON CURD #3

Ingredients

  • 1/2 C. butter
  • 4 large lemons (need juice and grated rind)
  • 4 beaten eggs
  • 2 C. sugar

Directions

  • Melt the butter on low and add the rind and lemon juice. Stir in eggs and sugar, mixing well. Continue heating until it thickens. Tastes great on a bagel with cream cheese
