Lemon Dill Chicken

Ingredients

1/4 cup (1/2 stick) butter
3 Tablespoons lemon juice
1 Tablespoon dillweed
1 teaspoon salt
1 teaspoon paprika
1 large clove, garlic, minced
freshly ground black pepper
4 large frying chicken breasts
Parsley and lemon wedges for garnish
Ingredients to marinate chicken.
1/2 cup fresh lemon juice
1/4 cup Canol oil
2 garlic cloves
1 T fresh oregano

First: lemon juice into food processor bowl.


Pour in Canola oil, garlic and fresh oregano; process until garlic is minced.


Pour liquid into a ziploc bag and marinate chicken for 45-90 minutes.


Melt butter in large skillet.


Add all the remaining ingredients except chicken.


Heat through.


Add chicken and bring just to a boil.


Turn down heat immediately and simmer covered over low heat for a total of 30 minutes or until chicken is tender.


Turn chicken over after 15 minutes.


Remove chicken to a platter.


Serve with rice or noodles and spoon lemon dill butter sauce over all.


Garnish with parsley and lemon wedges
