Lemon Grilled Chicken
1/2 cup lemon juice
1/4 cup vegetable oil
3 TBSP. chopped onion
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. dried thyme
1 garlic clove, minced
1 Fryer chicken(3 to 4lbs.)cut-up
In a resealable plastic bag, combine first 7 ingredients; mix well.
Remove 1/4 cup for basting and refrigerate.
Add chicken to bag.
Marinate for 8 hours or overnight in fridg.
Drain and discard marinade from chicken.
Grill covered over medium heat for 20 minutes. Baste with reserved marinade.
Grill for 20 or 30 minutes longer or until juices run clear, basting and turning several times.
Can be baked in oven in a 9x13 baking dish uncovered at 350 degrees for 50 to 60 minutes or until juices run clear. :)
