LEMON MERINGUE PIE

Ingredients

  • 1 plain baked pie shell
  • 1 1/2 T crisco
  • 8 T flour
  • 1 Cup sugar
  • 1/4 tsp salt
  • 2 Cups water
  • 2 egg yolks, beaten
  • Juice of 1 1/2 lemons
  • zest from 1 lemon
  • 4 T confection sugar
  • 3 egg whites
  • 2 tsp lemon juice

Directions

  • In top of double boiler...Melt fat. Add flour, sugar, salt water and yolks. Mix well. Cook over hot water until thick, stirring constantly. remove from heat and add lemon juice and zest. Pour into pie shell.
  • Beat egg whites frothy...continue beating while adding sugar gradually until whites hold peaks. Fold in lemon juice and cover the top of the pie.
