Lemon Pepper Chicken
1 lb. of boneless, skinless chicken breast
2 T fresh lemon juice
1/2 tsp grated lemon zest
2 T extra virgin olive oil
1/2 tsp salt
1 tsp black pepper
1/2 tsp sugar
In Ziploc bag combine lemon juice, lemon zest, olive oil, salt, pepper, and sugar.
Add chicken breasts and turn to coat.
Marinate at room temperature for 30 to 60 minutes.
Preheat oven to 350.
Place chicken in baking dish sprayed with cooking spray.
Bake for 15 minutes.
Turn chicken and baste with any marinade remaining in bag, and bake 15 minutes.
Serve with over rice or pasta.
