Lemon Pudding Cake

Ingredients

1/4 cup sifted flour
1 cup sugar
1/4 tsp. salt
1 1/2 tsps. grated lemon rind
1/4 cup lemon juice
2 eggs, separated
1 cup evaporated milk


Preheat oven to 350 degrees.


Sift dry ingredients together. Stir in lemon rind,juice and well beaten egg yolks and milk. Fold in stiffly beaten whites. Pour into 8 inch casserole: set casserole in pan of hot water. Bake at 350 degrees for 40 to 45 minutes.
