Lemon Ricotta Cookies

Serves 4 dozen | Prep Time 20 minutes | Cook Time 15 minutes


2 1/2 C flour
1 teaspoon baking powder
1 teaspoon salt
1/2 cup butter, softened
2 cups sugar
2 eggs
1 15 oz container whole mile ricotta cheese
3 tablespoons lemon juice
1 lemon, zest end

1 1/2 cups powdered sugar
3 tablespoons lemon juice
1 lemon, zoster

In a medium bowl combine flour, baking powder, and salt. Set aside

In large bowl, combine butter send sugar.musing an electric mixer, beat butter and sugar until light and fluffy.

Add eggs one at a time, beating until incorporated.

Add ricotta cheese, lemon juice, and lemon zest. Beat to combine.

Stir in dry ingredients.

Line baking sheets with parchment paper. Spoon the dough (one tablespoon per cookie) onto the baking sheets.

Bake for 15 minutes

Remove from oven and let rest on cookie sheets for 10 minutes.


Combine powdered sugar, lemon juice, and lemon zest in a small bowl and stir until smooth. Glaze cookies and let glaze harden for about an hour prior to placing in container.
