LEMON SNAPS

Ingredients

  • 3/4 C butter
  • 1 egg
  • 1 T lemon juice
  • 1 lemon cake mix (w/pudding)
  • 1 C cornmeal
  • 3 T lemon zest
  • 10X sugar for rolling

Directions

  • Preheat oven to 375’
  • Beat butter, egg and lemon juice on med , about 30 seconds.
  • Slowly beat in cake mix, cornmeal and lemon zest
  • Make into 1” balls - roll in sugar
  • Bake 9-10 minutes
