Lemon Sponge Pie
3 T butter softened
1 c sugar
1 tsp lemon zest
1/4c lemon juice
3 T flour
1c whole milk
cream butter and sugar. Separate eggs add yolks to butter and sugar one at a time. Add lemon, flour, salt, mix well. Stir in milk.
In separate bowl, beat egg whites till stiff. Fold into lemon mix. Pour into unbaked pie shell, bake 400 for 10min.
Decrease to 350 for 35min or till knife comes out clean.
