Lemon Streusel Muffins
Full box Dassant Meyer Lemon Cake Mix
2 large eggs
1 cup milk
1/2 cup vegetable oil
1/2 cup all-purpose flour
1 teaspoon ground cinnamon
1/2 cup packed light brown sugar
4 tablespoons butter- softened and cut into 1/2-inch pieces
Preheat oven to 400° F. Lightly grease a standard muffin tin with butter or cooking spray. Combine eggs, milk, and oil. Add mix. Blend together until batter is smooth, about 1 to 2 minutes. Pour batter 2/3 full in muffin tins. Sprinkle muffins tops with streusel and bake for 14 to 16 minutes.
In medium bowl, stir together the flour, cinnamon and brown sugar. Add the butter pieces and combine mixture with a fork until the topping resembles coarse crumbs.
