Lemon Thyme Bread

Serves 1 loaf | Prep Time | Cook Time


3/4 c. milk
1 Tb. minced fresh thyme or 1 tsp. dried thyme
1/2 c. butter, softened
1 c. sugar
2 eggs
2 c. flour
1 1/2 tsp. baking powder
1/4 tsp. salt
1 Tb. lemon juice
1 Tb. grated lemon peel

In micro-safe bowl, combine milk and thyme. Microwave, uncovered, on high 1-2 min. or 'til bubbly, cover and let stand 5 min. Cool to room temp.

In lrg. bowl, cream butter and sugar. Add eggs, one at a time, beating well after each. Combine flour, baking powder and salt; add to creamed mixture alternately wtih reserved milk mixture. Stir in lemon juice and peel.

Pour into greased 9X5X3" loaf pan. Bake at 350ø for 40-45 min. or 'til toothpick comes out clean. Cool for 10 min. before removing from pan to wire rack.


1/2 c. confectioner's sugar

1 Tb. lemon juice

Combine glaze ingredients 'til smooth; drizzle over bread.
