Lemon Upside Down Pudding

Serves 8-10 | Prep Time 15 minutes | Cook Time 25 minutes


2 1/4 tbsp flour
3/4 cup sugar
1 tbsp butter
1/4 tsp salt
2 Eggs, separated and beaten
1/4 cup lemon juice
1 cup milk

Combine Flour, sugar and salt with softened butter.

Add Egg yolks, lemon juice and milk.

Then fold in stiffly beaten egg whites.

Pour into buttered Casserole dish.

Set in pan of warm water.

Bake at 375 until top is firm.

Turn upside down onto dish or serving try.

(Bottom of this pudding will be a lemon sauce that will spread out over top of pudding when turned over!)

total disaster! the "pudding" was a watery mess that splashed all over the place. where did i go wrong?? should the filling be cooked first before baking? should there be more flour?? let me know if the proportions are correct. thanks Molly
