Lemon Upside Down Pudding
2 1/4 tbsp flour
3/4 cup sugar
1 tbsp butter
1/4 tsp salt
2 Eggs, separated and beaten
1/4 cup lemon juice
1 cup milk
Combine Flour, sugar and salt with softened butter.
Add Egg yolks, lemon juice and milk.
Then fold in stiffly beaten egg whites.
Pour into buttered Casserole dish.
Set in pan of warm water.
Bake at 375 until top is firm.
Turn upside down onto dish or serving try.
(Bottom of this pudding will be a lemon sauce that will spread out over top of pudding when turned over!)
