Lemon Zucchini Muffins

Ingredients

2 cups flour
½ cup sugar
1 Tablespoon baking powder
1 teaspoon salt
1 teaspoon grated lemon peel
½ teaspoon nutmeg
½ cup chopped nuts
½ cup raisins
2 eggs
½ cup milk
1/3 cup oil
1 cup packaged zucchini (not drained)


In large bowl, mix flour, sugar, baking powder, salt, lemon peel, and nutmeg.


Stir in nuts and raisins.


In small bowl, beat eggs with fork; beat in milk and oil.


Add to flour mixture, then sprinkle zucchini on top.


Stir until becomes blended.


Fill greased pans 2/3 full.


Bake at 400-degrees for 15-25 minutes.
