LEMON WAFERS

Ingredients

  • 1 cup butter
  • 1/2 tsp salt
  • 2 cups sugar
  • Pinch of ginger
  • 3 eggs, slightly beaten
  • 3 tbls lemon juice
  • Approx 3 cups sifted flour

Directions

  • Cream butter until light
  • Gradually add sugar and beat until light and fluffy
  • Beat in eggs, lemon juice, salt and tiny pinch of ginger
  • Blend well
  • Add enough flour to make a firm dough for rolling out
  • Roll out thinly and cut out small rounds
  • Bake on buttered cookie sheet 2 inches apart in a 350 oven for 10-12 minutes
