Lemony Chicken & Asparagus
3/4 lb. boneless, skinless chicken breasts, cut into bite size pieces or strips
1/4 tsp. black pepper
1 cup milk
1 pkg. (9 oz) Hollandaise Sauce Mix
3 T. butter or margerine
1 lb. asparagus spears cut into 1 inch pieces (I use frozen asparagus too, just barely cooked)
1 medium onion, quartered and sliced
1 to 2 tsp. lemon juice (optional)
Toss chicken with black pepper.
In a measuring cup stir the Hollandaise Sauce mix and the milk until smooth. Set aside.
In a large skillet melt the butter over medium high heat. Add the chicken and cook it until it appears done, stirring occasionally. Add the asparagus and the onion. Stir contantly, cooking for another 4 to 5 minutes.
Stir in sauce mix, stirring constantly and bring to a boil. Reduce heat and simmer, stirring occasionally, another 5 to 10 minutes.
