Lemony Chicken

Serves 4-6 | Prep Time 30 | Cook Time 30


4-6 chicken breasts (cooked and shredded)*
1 C sour ccream
1 can of cream of chicken soup
1 1/2 T lemon juice (I do 2 lemons usually)
1 package of ritz crackers (crushed)
1 tsp. poppy seeds ( I never do this)
1/2 stick of margarine, melted (I do butter)

*Boil chicken in water until no longer pink. Pull chicken ot of the water and allow to cool so you can handle it. Pull it apart with your hands. It shreds easier when warm.

Place cooked and shredded chicken in a 3 qt. casserole pan. (I do a 13 X 9 baking dish)

Mix sour cream, soup and lemon juice together. spread mixture over the chicken.

Sprinkle crackers and poppyseeds on top of casserole

Drizzle margarine on top of casserole.

Bake at 350 for 30 minutes or so
