Lentil and chicken salad
1 cup cooked lentils
1 cup grilled chicken, chopped
1 cup cucumber, cubed
1/4 cup fresh daikon radish, cubed
1/4 cup red onion, thinly sliced
3 tbsp olive oil
1/4 cup balsamic vinegar
2 cloves garlic, crushed
salt to taste
3 strips crispy bacon, crumbled
Mix all ingredients together then toss with dressing. Let marinade in dressing for 1/2 an hour or more. Makes great leftovers too.
Pairs Well With
Lentils are a Super Food. They're high in essentials and are second only to Soybeans as far as having the most complete proteins in the vegetable kingdom. Other legumes fall far behind.
I serve this cold or room temperature. I'm not sure how the cucumbers would fare if the lentils were hot. It's even better the next day.
