Why I Love This Recipe

My nana and our neighbour Lesley share a lot of recipes and baking techniques between and this is one of a few that I like. You might want to half the ingredients if you want to make one loaf sized cake.

Ingredients You'll Need

8 oz margarine
12 oz brown sugar
1 1/2 lb mashed banana
4 eggs
7 oz brown SR flour
7 oz white SR flour
1/2 tsp. bicarb. soda
1 tsp. salt

Optional extras: coconut, sultanas, apple (diced), cinnamon


1. Preheat oven to gas mark 4

2. Cream butter and sugar together

3. Sieve in half of all the flour mixed together

4. Mix with 2 eggs until smooth

5. Add in remaining flour and eggs with bicarb, salt and half of banana

6. Add remaining banana

7. Add to a buttered cake tin or buttered loaf tin (for a half mixture)

8. Place in oven for around 45 mins until golden brown
