LIGHT AND CRISP WAFFLES

Ingredients

  • 2 egg yolks
  • 2 Cups sweet milk or butter milk
  • 2 Cups flour
  • 1 Tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/3 Cup oil
  • 2 egg whites, stiffly beaten

Directions

  • Preheat waffle maker. Put all of the ingredients into a large mixer bowl, except the beaten egg whites. Beat on low until moistened. increase to medium, mix until smooth. By hand fold in the egg whites. Pour a 1/2 C. of batter into the center of the grid. Close waffle maker, bake until golden (3-3 1/2 minutes). Be sure to grease the grid now and then between baking waffles, to make sure they don't stick.
