Light and Delicious Pasta Salad
16 oz box of penne pasta
1 bag baby spinach
1 pint cherry tomatoes
1 small container tiny mozzarella balls
Vinaigrette dressing (any flavor/ type you like)
Cook pasta according to directions. Strain and run cool water over until slightly warmer than room temperature. Add spinach and toss to wilt the spinach slightly. Add tomatoes, mozzarella (and prosciutto if wanted)and toss again. Add dressing to taste. Serve chilled or room temp. Makes a FANTASTIC light summer meal.
