Linda Williamson's Creamed Peas and Pearl Onions

Ingredients

One bag Pearl Onions peeled (lil white onions in onion bag in produce section) or bag of frozen pearl onions
3 cups frozen peas
*Opt: A handful of baby carrots
1/2 cup water
3 tsp sugar
4 TBS butter
Salt to taste
3 Cups whole milk or 2 1/2 cup heavy cream and 1/3 Cup water
*Opt: 2- 3 tsp non dairy powdered coffee creamer (I add if using milk)
Cornstarch


Put Onions (cut if too big), 2 tsp sugar, 1 TBS butter, Milk (and creamer) couple dashes of salt


Simmer lightly until onions are soft DO NOT BURN/ SCALD MILK!!!


Cool a Lil


While cooling, in frying pan put water, 3 TBS butter, 1 tsp sugar, couple dashes of salt, (if adding opt. carrots add them here and cook 1/2 way before adding peas) add peas and heat


Add peas and liquid to milk and onions


Add more salt to taste


Mix cornstarch with a lil water to make a real thick paste (I use a coffee cup easier to pour small streams)


Stir paste very slowly (so not to clump) into simmering liquid until thickness you desire
