Linguine with Spicy Artichoke Sauce
1 T olive oil
6 garlic cloves, minced
¼ t crushed red pepper flakes
1 28-oz can plum tomatoes, chopped and drained
½ t dried basil
½ t dried oregano
½ t salt
1 6-oz jar marinated artichoke hearts
¼ cup minced fresh parsley
1 lb Linguine
Grated parmesan cheese
Heat oil in a large skillet over medium heat. Add garlic and pepper flakes and cook 2 minutes, stirring often. Stir in tomatoes, basil, oregano, and salt and bring to a boil. Reduce to a simmer and cook, stirring often, for 15 minutes.
Add artichokes and their marinade to the sauce. Stir in the parsley. Simmer about 5 minutes.
Toss sauce with about cooked linguine and serve with parmesan cheese.
