Loaded Baked Potato Casserole
8 large potatoes
1/2 package of bacon, fried crispy and crumbled
10 oz of grated cheddar cheese
8 Tbs butter, melted
1 16 oz. container sour cream
salt and pepper to taste
1 bunch chopped green onions (optional)
Bake the potatoes at 425 for about 45 mins or until done, let cool. Scoop out as much of the potato as you can. (If you want these to be just regular twice baked potatoes, leave enough in the skin so that the potato holds its shape.)
Add bacon to the potatoes. Mix in melted butter, cheddar cheese, sour cream, salt and pepper and green onions/scallions if wanted. Combine well.
Put the potato mixture into a 9x13 pan. Bake at 350 degrees until bubbly.
Pairs Well With
I love baked potatoes, but my husband doesn't. This casserole gives the taste of a baked potato, but 'acts' like mashed potatoes, which he loves.
