Loaded Fruit oatmeal Pancake

I'm all about finding healthy substitutes for the foods I love. Here's a healthy version of your typical pancake with a refreshing twist.
Ingredients You'll Need
1/2 cup plain oatmeal or 1 pkg of any flavor oatmeal
2 tbs of vanilla extract
Optional: 1 tsp of a fruit flavor extract
fruit of your choice. I prefer blueberries and banana with a little banana extract
3 egg whites or 2 servings of egg beaters
A pinch of water
Optional a pinch of sugar or sugar substitute
Sugar free maple syrup
In a bowl mix all ingredients till well blended.
Pour into a stovetop pan cook until one side turns a golden color.
Flip pancake until other side is golden
Sprinkle with a dusting of powdered sugar
Serve with or without sugar free maple syrup
