Loaded Goat Blueberry Cheesecake
1 box yellow cake mix
1/3 cup soft butter
3 large eggs
3/4 cup sugar
2 pkgs. (8 oz. each) cream cheese, softened
2 teaspoons vanilla
2 cups sour cream
1/4 cup sugar
1 tablespoon vanilla
1 can (21 oz.) blueberry pie filling
For crumb mixture, mix cake mix, butter and 1 egg until crumbly. Press lightly into a 9 x 13-inch baking pan.
For filling, beat 2 eggs, 3/4 cup sugar, cream cheese and 2 teaspoons vanilla until smooth. Pour over crumb mixture. Bake at 350ºF for 25 minutes or until set.
For topping, mix sour cream, 1/4 cup sugar, and 1 tablespoon vanilla. Spread over cheese. Cool. Spread blueberry pie filling on top. Refrigerate overnight.
