Low carb Baked Chicken Nuggets

- Servings: 4
- 4 skinless boneless chicken breasts – cut into big bite-sized pieces
- 1/2 cup pork skins -- crushed, ie pork rinds
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 1/4 teaspoon salt
- 1/4 cup olive oil
DIRECTIONS
Combine pork rinds, basil, thyme, and salt in a ziploc. Seal the bag and shake well to mix. Dip the chicken pieces in the olive oil and shake off excess. Place, a few pieces at a time, in the crumb mixture and shake to coat. Put the nuggets on a greased baking sheet
and bake at 400 degrees for 20 minutes or until done.
