Lubyi (Green Bean Stew)

Chill in fridge before serving, and make sure you have plenty of Arabic bread to eat this with. Even better if made a day before.
Ingredients You'll Need
1 pound fresh green beans, washed, ends snipped, and cut into 2 inch lengths
1 large clove garlic, chopped
1 medium onion, chopped
1/4 cup olive oil
salt and pepper to taste
14 ounce can diced tomatoes with juice
1 teaspoon Middle Eastern spice mix
Saute the garlic and onion in olive oil. Add the seasonings. Add the beans to the onion mixture, tossing lightly. Cover and steam for 10 minutes, tossing once during the cooking process. Add the tomatoes.
Cover and cook 20-25 minutes.
