Luscious Lemon Cookies

Compliments pour in over this cookie! It is a simple yet wonderful addition to my Christmas repertoire now and is always in demand!
Ingredients You'll Need
1 1/2 cups flour
1/4 tsp baking powder
1/8 tsp baking soda
1/4 tsp salt
1/2 cup butter
1 cup sugar
1/2 tsp vanilla
1 Tbsp fresh lemon juice
1 tsp fresh lemon zest
Preheat oven to 350 degrees F.
Grease cookie sheet.
Combine dry ingredients and set aside.
Cream butter and sugar together then add eggs, vanilla, lemon juice, and lemon zest and mix well.
Roll into 1" balls and coat in powdered sugar. Place onto 12 balls per batch onto a greased cookie sheet.
Bake 9-11 minutes. Cookies should be light in color with bottoms barely brown when done. Reduce heat in oven if browning too much. The cookies are done when no longer shiny or melty looking, but more like a matte finish on photos.
Cool 3 minutes on pan before carefully removing and placing on a wire rack to cool.
