Luscious lemon bars

Serves 16 | Prep Time 15 | Cook Time 50 - 55

Ingredients

For the shortbread crust:
125 grams of salted butter ( I used Clover brand) of icing sugar
65 grams of icing sugar (plus extra for sprinkling on cooled bars)
250 ml of plain flour
A few drops of vanilla extract
For the lemon filling:
2 large eggs
250 ml of granulated sugar
2 Tblsp plain flour
2 Tblsp lemon juice
1 tsp vanilla extract


For the shortbread crust:


Mix together butter, icing sugar and flour and vanilla essence until just combined and nice soft dough is formed


Press down dough into rectangular baking dish


( I used a brownie pan that was 25 by 18 cm)


Bake for 25 minutes at 175 degrees celcius


(Once done let cool completely before pouring over the lemon filling)



For the lemon filling:


Mix together all ingredients until frothy


Then pour over cooled shortbread crust and bake at 175 degrees celcius for 25 to 30 minutes until cooked


Once fully cooled (mine took about 30 minutes)


Dust with remaining icing sugar and cut into bars


Leave overnight in fridge to set properly

Notes

After searching for lemon bar recipes and trying out a few and being a bit disappointed I decided to try a basic shortbread recipe as the crust and a simple lemon meringue filling for the lemon part of the recipe and after a few failed attempts I got the taste and baking time right :)
