INGREDIENTS

  • Servings: 6
  • 1 cup pancake/waffle mix
  • 2 teaspoons white sugar
  • 1 teaspoon ground cinnamon
  • 1/2 cup cold milk
  • 2 eggs
  • 1 teaspoon vanilla extract

DIRECTIONS

Preheat waffle iron. In a large mixing bowl, combine waffle mix, sugar and cinnamon. Stir in milk, eggs and vanilla extract.


Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until golden brown. Serve hot.

Throughout my chemo, it was really difficult to get food down. One of my favorite memories during that time was on Mother's Day. The kids surprised me with this great recipe. Tom created this recipe after finding a box of waffle mix in the pantry. It's not 100% homemade, but it was a sweet gesture. You will need a waffle iron though - luckily Mrs. McCluskey had one.

A fellow BakeSpacer posted a recipe similar to this recently. Sounds like a tasty idea, the little indentations would help hold all that good butter and syrup.

Will add this to the collection as I recently purchased a new waffle making machine : ) The girls are loving the on the go Waffle Sticks, this should just perk them up a tish bit more in the mornings.
