Lynne's Chocolate Chip Oatmeal Cookies

Why I Love This Recipe
My friend Lynne shared this recipe with me and it is a family favorite. You can vary the flavor of pudding mix you use and I whiz my oats in the blender until fine because my DS doesn't like oats.

Ingredients You'll Need
1/2 cup shortening
1/2 cup butter, room temperature
3/4 cup sugar
3/4 cup firmly packed dark brown sugar
2 eggs
1 pkg. (4-serving size) instant vanilla pudding mix
1 Tbsp. vanilla
1 tsp. baking soda
1 tsp. water
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/2 tsp. salt
1 cup old fashioned oats
2-1/4 cups flour
1 pkg. (12 oz.) chocolate chips
1-1/2 cups chopped walnuts
Directions
Preheat oven to 375ºF.
Grease cookie sheets.
Beat shortening and butter in a large bowl until light.
Gradually add white and brown sugar, beating until light and fluffy.
Add eggs, one at a time, beating after each addition.
Add pudding mix, vanilla extract, baking soda,water, ground cinnamon, ground nutmeg, salt, flour and oats (may be ground to a fine powder). Mix until blended.
Stir in chocolate chips and walnuts.
Drop by large rounded spoonfuls(about3 Tbsp. each) onto prepared cookie sheets, about 2 inches apart. Bake until cookies appear dry and tops are lightly cracked, yet soft when pressed (about 12 min.)
Do not overbake.
Cook cookies 5 minutes on cookie sheets before removing to wire rack.
