This is a colourful salad, looks good on the buffet table.
Ingredients You'll Need
1 Large Mango --peeled and cut up
1 cup tomatoes cut up ( quartered grape tomatoes work well)
1 can ( 19 oz) black beans-- drained and rinsed well
1 can ( 14 oz ) kernel corn-- drained
1 cup diced green or red pepper
1/2 cup sliced green onions
1 cup peeled cut up avocado - best to add this last as it browns quickly after cutting
2 Tsp ( or more to taste) minced fresh cilantro dressing
2 Tbsp fresh lime juice
1 Tbsp olive oil
1/4 each salt and pepper
1/8 tsp each ground cumin and chili powder
Directions
Mix dressing ingredients and pour over the salad ingredients.
