MANGO AVOCADO SALAD

Ingredients

  • 1 Large Mango --peeled and cut up
  • 1 cup tomatoes cut up ( quartered grape tomatoes work well)
  • 1 can ( 19 oz) black beans-- drained and rinsed well
  • 1 can ( 14 oz ) kernel corn-- drained
  • 1 cup diced green or red pepper
  • 1/2 cup sliced green onions
  • 1 cup peeled cut up avocado - best to add this last as it browns quickly after cutting
  • 2 Tsp ( or more to taste) minced fresh cilantro dressing
  • 2 Tbsp fresh lime juice
  • 1 Tbsp olive oil
  • 1/4 each salt and pepper
  • 1/8 tsp each ground cumin and chili powder

Directions

  • Mix dressing ingredients and pour over the salad ingredients.
