MAPLE PECAN CORNBREAD WITH MAPLE BUTTER

Ingredients

  • Cornbread Ingredients:
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 eggs
  • 3 tablespoons LAND O LAKES® Butter, softened
  • 2 tablespoons firmly packed brown sugar
  • 1/2 cup buttermilk**
  • 1/4 cup pure maple syrup or maple-flavored syrup
  • 1 teaspoon maple flavoring
  • 3/4 cup chopped pecans, toasted
  • Maple Butter Ingredients:
  • 1/2 cup LAND O LAKES® Butter, softened
  • 1 tablespoon pure maple syrup or maple-flavored syrup
  • 1 teaspoon maple flavoring

Directions

  • Heat oven to 350°F. Combine cornmeal, flour, baking powder, baking soda and salt in small bowl.
  • Combine eggs, 3 tablespoons butter and brown sugar in large bowl. Beat at medium speed until well mixed.
  • Add buttermilk, 1/4 cup maple syrup and 1 teaspoon maple flavoring. Continue beating until well mixed. Reduce speed to low; add flour mixture. Beat, scraping bowl often, until well mixed. Stir in pecans by hand.
  • Spoon into greased 8-inch square baking pan. Bake for 25 to 30 minutes or until toothpick inserted in center comes out clean.
  • Meanwhile, combine all maple butter ingredients in small bowl. Beat at medium speed until fluffy. Serve with warm cornbread.
  • **Substitute 2 teaspoons vinegar or lemon juice plus enough milk to equal 3/4 cup. Let stand 10 minutes.
