MEDITERRANEAN TUNA MELTS

Ingredients

12-ounce can water-packed chunk-light or albacore tuna, drained
1 cup canned artichoke hearts, drained and chopped
1/3 cup chopped red onion
1/2 cup nonfat or light mayonnaise
1/4 teaspoon Italian seasoning
1/4 teaspoon ground black pepper
4 whole-wheat or oat-bran English muffins, split and toasted
- 1/3 cup grated Parmesan cheese


Combine the tuna, artichoke hearts, onion, mayonnaise, Italian seasoning, & pepper in a med-sized bowl and stir to mix well.


Add a little more mayonnaise if the mixture seems too dry.


Arrange the English muffins on a baking sheet, split side up.


Spread about 1/4 cup of the tuna mixture over each piece and place under a preheated broiler for 2 to 3 min, until the tuna is heated through.


Top each muffin half with 2 t. of the cheese & broil for 1-2 min., til the tops are lightly browned.


Serve hot.
