Macadamia Nut Strawberry Cream

Serves 1 Cup | Prep Time up to 30 | Cook Time 0


1/4 cup macadamia nuts, soaked overnight
1/2 cup fresh strawberries, hulled
1/4 cup soy milk, or non dairy milk of choice
6 drops liquid stevia, more or less to taste

1. Soak macadamia nuts overnight.

2. Drain and rinse the macadamia nuts.

3. Blend all ingredients together in a blender until smooth, adding more stevia if desired.

*Tasty Tip: You can serve this immediately OR let sit in the fridge for 30 minutes to thicken a touch more, but not necessary.

Pairs Well With


This is a simple recipe for an versatile fruit dip, pudding topper or parfait layer. Chef's choice! I like strawberry, but feel free to use your berry of choice for the base. The only time consuming matter with this recipe is soaking your macadamia nuts overnight, but don't be lazy. Just do it! It really is the only way to get a smooth and velvety texture.
