Why I Love This Recipe

This is a simple recipe for an versatile fruit dip, pudding topper or parfait layer. Chef's choice! I like strawberry, but feel free to use your berry of choice for the base. See how I used this in the recipe for "Ashcakes Chia Parfait" from the San Francisco episode of my web series (video link above). The only time consuming matter with this recipe is soaking your macadamia nuts overnight, but don't be lazy. Just do it! It really is the only way to get a smooth and velvety texture.

Ingredients You'll Need

1/4 cup macadamia nuts, soaked overnight
1/2 cup fresh strawberries, hulled
1/4 cup soy milk, or non dairy milk of choice
6 drops liquid stevia, more or less to taste


Directions

Soak Nuts overnight


Drain AND rinse nuts


Blend all ingredients together in a blender until smooth, adding more stevia if desired.


*Tasty Tip: You can serve this immediately OR let sit in the fridge for 30 minutes to thicken a touch more, but not necessary.
