1 Pound macaroni
1 1/2 Cups coarsely grated carrots
1 Cup diced celery
1 Scallion, diced
1 Cup mayonnaise
1/4 Cup white vinegar
1/2 Cup sugar
1 Tablespoon sweet pickle relish
1 Tablespoon yellow mustard
1 1/2 Teaspoons salt
Freshly ground black pepper
2 Tablespoons finely chopped parsley
In a saucepan boil 8 cups of water with 1 teaspoon salt. Add macaroni and boil 11 minutes. Remove from heat and drain in a colander. In a bowl, combine the pasta and vegetables. Whisk together the mayonnaise, vinegar, sugar, relish, mustard, salt, and pepper, pour this over the salad, add the parsley, and stir together gently. Refrigerate until serving.
Pairs Well With
I use whole wheat elbow macaroni here, and it works beautifully if you can find it.
