Why I Love This Recipe

*You can drizzle chocolate on top and gently press and candy into the cookie after they are baked

Ingredients You'll Need

3 large egg whites
1/2 Cup sugar
1/2 teaspoon pure vanilla extract
1/4 teaspoon salt
1 14 ounce (400 gram, or approx. 5 Cups) bag of sweetened shredded coconut


Directions

1. Preheat oven to 325F (160C)


2. Line cookie sheets with parchment paper. Cookies will stick on sheet without the paper so this step is very important


3. Whisk together the egg whites, sugar, vanilla, and salt until glossy, foamy, and the sugar is mostly dissolved


4. Fold in the coconut


5. Using 2 spoons or a small ice cream scoop, drop the batter onto the cookie sheets. Leave a little space between each cookie


6. Bake until golden brown. This may take 15-25 minutes. I suggest putting them in for 10 minutes, rotate the sheets and then check on them after 5 minutes and every 2 minutes after that
