*You can drizzle chocolate on top and gently press and candy into the cookie after they are baked

  • 3 large egg whites
  • 1/2 Cup sugar
  • 1/2 teaspoon pure vanilla extract
  • 1/4 teaspoon salt
  • 1 14 ounce (400 gram, or approx. 5 Cups) bag of sweetened shredded coconut


  • 1. Preheat oven to 325F (160C)
  • 2. Line cookie sheets with parchment paper. Cookies will stick on sheet without the paper so this step is very important
  • 3. Whisk together the egg whites, sugar, vanilla, and salt until glossy, foamy, and the sugar is mostly dissolved
  • 4. Fold in the coconut
  • 5. Using 2 spoons or a small ice cream scoop, drop the batter onto the cookie sheets. Leave a little space between each cookie
  • 6. Bake until golden brown. This may take 15-25 minutes. I suggest putting them in for 10 minutes, rotate the sheets and then check on them after 5 minutes and every 2 minutes after that
