MADOFF CHEESE PIE - A QUICHE WITHOUT A CRUST & A SHORT ECONOMIC HISTORY

Ingredients

  • 1 lbs feta cheese
  • 1 lbs kefir cheese
  • 1 cup grated Provalone cheese
  • 6 eggs
  • 1/2 cup flour
  • 1 cup milk
  • 1 red pepper, chopped
  • 1 half red Spanish onion, chopped
  • 1 bunch (1 cup) fresh dill, chopped
  • 1 cup grated Romano cheese

Directions

  • Preheat oven to 375 degrees
  • Shave off top of feta cheese, reserve for topping
  • Crumble the rest of the feta cheese in a large bowl
  • Add the kefir cheese, blend with mixer
  • Add the eggs and beat with a mixer
  • Add the milk, beat lightly
  • Add the grated provolone, stir in mixture
  • Add half of the chopped red pepper, spanish onion and dill stir in mixutre
  • Pour into greased 12” or 10” cast iron skillet
  • Add the remaing toppings; feta cheese, red pepper, Spanish onion, dill, Romano cheese
  • Bake in preheated oven for 45 minutes to 1 hour
  • Until the top rises and gets a light golden color
  • Serves 6 to 8, can be used as a main dish or appetizer, and can be served hot or cold.

Notes

OGM! I saw so many similarities between my crust-less kefir quiche and economic shenanigans that I had to put down my spatula and film it in my test kitchen. Try it! It's a tasty treat that even the street can't beat.
