Why I Love This Recipe
This was always my four kids' favorite dessert for two reasons: It's killer delicious, but also it's magic. It's so easy that kids can make it, and they loved pouring in the crust first, then waiting for it to magically appear on top when the cobbler is finished and pulled from the oven. My husband and I love it because it got our kids excited about baking, and because it's a totally reliable go-to dessert that will impress company every time. Steaming hot, oozing with sweet berry syrups, then drizzled with vanilla ice cream-- it's a comfort food and a dazzling dessert all at the same time!
Ingredients You'll Need
½ Cup butter
2 & ¼ Cups sugar
1 & ½ Cups flour, sifted
½ tsp salt
1 Tablespoon baking powder
¾ Cup whole cream
3 Cups fresh or frozen berries (I use blackberries, blueberries and raspberries)
1 Cup water
Vanilla ice cream, optional
Directions
1. Preheat oven to 375 degrees. Make crust: In a large bowl, cream butter and ¾ Cup of the sugar until fluffy (reserve 1 & ½ Cups sugar for later). Beat in flour, salt, and baking powder. Add milk and beat until smooth. Spread in a greased 9x13-inch baking dish or pan.
2. Top with berries. Next, pour water over all. Then sprinkle with remaining 1 & ½ Cups sugar.
3. Bake 40 to 45 minutes. The fruit will sink and the batter will rise to form a crust on top. Serve with ice cream, if desired.
