Why I Love This Recipe
My Dutch Great Grandma made this kind of food BUT I don't remember her making this corn mash... It was my own concoction that my family loves! I asked my Dutch friend here on BakeSpace Fanmajie what its called and she named it Mais Stamppot :) In the pic I served it w/ broccoli and carrot mash another fam favorite!
Ingredients You'll Need
About 2lbs stew meat or a beef roast
Beef bullion cubes
Garlic powder
Cornstarch
3-5 lbs potatoes peeled and 1/4rd
2 cans corn (can use frozen)
1-2 lg Green bell peppers (can use red bell pepper) cut in bite size pieces
Butter
Directions
Put about 2 cups very hot water and 3 beef bullion cubes in baking pan smash and stir till cubes are melted
Add meat add garlic powder to meat and bake at 350 'til cooked through (add more water if it gets too low)
Boil potatoes
In a frying pan melt 2 TBS butter
Add Green pepper cook 'til softened
Strain corn and add to peppers cook 'til well heated
After potatoes are done strain off water and put back in pan
Add about 1 stick of butter and mash w/ masher not mixer!
Add corn to potatoes and mix well
When beef is done remove it to a plate (if its a roast cut it into bite size chunks)
Add about 2 cups of water to remaining liquid in baking pan and add bullion cubes 1 at a time until it tastes right
Put cornstarch in a big cup and add just enough water to make a thick paste
Bring baking pan of dripping and bullion to a boil then turn dwn to simmer
Drizzle cornstarch paste slowly into gravy stirring constantly! (If you pour too fast or don't stir fast enough you'll get lumps!!!)
Keep adding 'til you get a real thick gravy when done put beef bake in gravy
To serve:
Put gravy and beef on the plate then fill up a cup of potato/ corn mash and dump it out on top of beef and gravy. (can put more gravy over top too if you like)
