Make Ahead Breakfast Burritos
2 Tbsp butter
1 pound pork sausage, cooked and drained
1/2 cup chunky salsa
2 cups Cheddar or pepper jack cheese (or a combo of both), grated
24 flour tortillas
Line 2 cookie sheets with parchment paper.
Beat eggs in a large bowl.
In a large skillet, melt butter. Add eggs.
Cook eggs, stirring frequently, until scrambled and set (don't over-cook).
Add cooked sausage and salsa to egg mixture and mix gently.
Warm tortillas as directed on package.
Place about 1/2 cup of the egg and sausage mixture onto each tortilla; sprinkle with cheese.
Roll up each tortilla to make burritos, folding in the ends and then rolling up.
Place on prepared cookie sheets and freeze until solid.
Wrap each burrito individually with plastic wrap, put in large zip-lock freezer bags, and return to the freezer.
When you are ready to eat, unwrap the burritos, wrap loosely in paper towel, and heat in the microwave for 1 to 3 minutes until hot and cheese is melted.
To make several burritos, thaw them overnight in the fridge, remove the plastic wrap, then wrap each in foil and bake at 350 degrees for 10 to 15 minutes until hot.
Pairs Well With
This is a good 'grab and go' breakfast to have in the freezer. It is easy to change this recipe by adding onions, peppers, or, shredded potatoes, tomatillo sauce, or by changing the meat to bacon or ham.
