Make-Ahead Mashed Potatoes
10 large potatoes, peeled, cut into chunks
1 cup sour cream (8 oz)
1 pkg cream cheese (8 oz) (softened)
6 Tbsp. butter or margarine
2 Tbsp. dried minced onion
1/2 - 1 tsp salt & paprika
Boil potatoes til done, drain & mash.
Add sour cream,
cream cheese, 4 tbsp. butter, onion and salt.
Stir til smooth and all is melted into potatoes.
Spread in 9 x 13 greased pan.
Melt remaining 2 Tbsp butter and drizzle over potatoes.
Cover and refrigerate or bake immediately at 350 for 40 min; uncover and bake 5 minutes longer.
If potatoes are made ahead & refrigerated, let stand at room
temperature for 30 minutes before baking.
