Serves 4-6 | Prep Time 10 | Cook Time 30

Ingredients

16 oz. pasta (noodles, spaghetti, macaroni), cooked according to package directions
1 lb. lean ground beef or turkey
2 T. olive oil
1/2 onion, chopped
1/2 c. bell pepper, chopped
2 cloves garlic, minced
Can stewed tomatoes
Small can tomato sauce
Can whole kernel corn
1 t. freshly ground back pepper


Brown ground meat in oil.


Sauté onion, bell pepper, and garlic for 2-3 minutes.


Add cooked pasta, tomatoes, tomato sauce, corn, and black pepper.


Mix well and cook on medium low until warmed, about 15 minutes, stirring occasionally.


Serve with rolls and tossed salad.

This was the go-to easy dinner recipe for my mother. Great weekday dinner and kids love it. She made up this recipe and changed ingredients at will considering what we had as leftovers in the refrigerator.
