Mango Creme Brulee
2½ cups cream, 35% or 650 g, liquid
1¼ cups milk or 300 g, full cream
1 tin Nestlé® Sweetened Condensed Milk or 397 g
24 egg yolks or 360 g
1 tablespoon vanilla essence
½ cup sugar or 120 g, to caramelize the surface
For the mango chutney:
¼ cup sugar or 60 g
½ cup water or 110 g
2 teaspoons lemon juice
½ teaspoon arabic mixed spicess, (5-spice)
2 small ripe mango or 300 g, fresh and cut into cubes
In a large saucepan, combine the cream, milk and NESTLÉ Sweetened Condensed Milk and bring to boil. Remove from heat; add the egg yolks and vanilla essence to the mixture and sift.
