2 Tommy Atkins type mango
2 red pepper
1/2 red onion
1 c chopped cilantro
2 Tbs rice wine vinegar
1 Tbs tumari or soy sauce
1 quick dash of crushed red pepper
Peel the mango with a potato peeler (seems the easiest way) and cut around the pit. Optional to peel and de-seed cucumber. Chop all the remaining ingredients and put all of it a bowl. Add vinegar, soy/tumari and red pepper.
Let sit for 15 minutes. This is a good time to prepare your favorite protein if you want to add it. I recommend.
Serve with protein over rice, quinoa or couscous.
