MANGO PINEAPPLE SALSA

Ingredients

  • 1 mango, diced
  • 1 cup diced fresh pineapple
  • 2 tbsp. water
  • 2 tsp. lemon juice
  • salt to taste
  • pepper to taste

Directions

  • Divide the diced mango into two equal parts. Using an electric blender or food processor, blend one portion of the mango with one teaspoon of the lemon juice until smooth.
  • In a separate bowl, combine the second portion of diced mango with the diced pineapple, one teaspoon lemon juice, red onion, salt and pepper. Add the blended mango mixture and combine. Chill before using
