Mango Rice

Ingredients

1/4 Cup clarified butter
3 Tablespoons chopped onion
1 Bay leaf
1 1/2 Cups uncooked long grain rice, such as Basmati rice
1 Cup boiling chicken stock
1/2 teaspoon salt
2 firm ripe mangoes, diced


Preheat oven at 325ºF. In a flame-proof casserole melt the clarified butter. Add the onion and bay leaf, stir for a few minutes, then add the rice. Stir the rice until well coated with butter. Allow the rice to just become golden. Add the boiling stock and salt. Cover the casserole and bake for 18 to 20 minutes. Remove from the oven and stir in the mangoes.

Aline you like to eat mangos raw, well than this dish is perfect for you. You can serve it with a chicken or beef dish and steamed vegetables to make it a balanced meal.

Cant wait to try this recipe. Mango is my favorite fruit.

Mmm this sounds really good. Now when the Mango season is coming up in march,april, may in India I really look forward to try this out:)
