Ingredients

I like to grill chicken and fish all year long. I developed this recipe as a zesty side dish. It's easy, beautiful and always gets raves. Also great served with chips at summer BBQs. Can be made the day before, just gets better when flavors blend.


I like to grill chicken and fish all year long. I developed this recipe as a zesty side dish. It's easy, beautiful and always gets raves. Also great served with chips at summer BBQs. Can be made the day before, just gets better when flavors blend.


Ingredients:


3 cups chopped mango (slightly crisp not over ripe)


1 medium red onion finely chopped


2-3 jalapeno pepppers seeds removed, finely chopped(2 grn, 1 red, red are milder)


1 tbsp fresh ginger finely chopped


1/3 cup fresh cilanto lightly chopped


1 1/2 tsp extra virgin olive oil


Mix ingredients together in a plastic container with tight lid. Turn upside down to thoroughly mix with oil. Let flavors blend for 1 hr. Ready to serve.
