1 cup peanut or olive oil
4-5 large potatoes (unevenly sliced, to avoid slices sticking together)
1 large onion diced
5-6 large eggs
1.5 tsp salt
1/2 tsp pepper
Directions
Before you begin get a 10" thick non stick frying pan and find a plate that is the same size as the pan or fit just snuggly inside.
Turn stove onto medium heat and pour oil into pan.
Cook potatoes and onions in oil and turning occasionally until potatoes become soft and tender, about 20-25 minutes.
Its a good thing if the onions start to caramelize, its adds a lot of flavor!
Meanwhile whisk eggs and salt and pepper together really well.
Once potatoes are cooked, drain as much oil as possible from the pan.
Make sure potato and onion mixture are spread evenly in the pan and then add egg mixture. Adjust heat as necessary, (medium-low) this needs to cook slowly.
As mixture is cooking, use a fork to redistribute any pooled up egg.
Once the mixture looks set enough to risk flipping, take your place and place it on top of the pan and flip onto the plate. (I do this part over the sink, just in case)
Slide the tortilla back into the pan to finish cooking the other side. Use a wooden spoon to reshape the sides if necessary.
Once cooked, transfer to a plate and serve warm or allow to cool and refrigerate!
This is the basic recipe, you can add anything you like. I've added sweet potato and chorizo sausage even other vegetables like broccoli, spinach and red peppers.
